now it is impossible to flip a page without crossing your hands in front of your face a losing fovus how do you do this?

the book says to keep book upright whilst focusing a flipping.

I cross my hands and don't worry about it. I know that photoreading is about overall patterns combined with occasional words or phrases I learned when first giving the book a once-over.
