While I can appreciate your wanting to convey synchronicity and reflection, I think what Kaiden was getting at was a little less ambiguous. The title is "The Healing Art Of Conscious Breathing" (keyword: Breathing).
I don't know anyone who dislikes dolphins so I can completely understand you wanting to put them on the cover of a CD. Dolphins are fascinating and we have much to learn from them. However, since Dolphins only need to breathe once every 2 minutes and can hold their breath for much longer, it might not be wise for us as humans to make a consistant habit of modelling their particular breathing patterns. =)
As for dolphins coming out of the water to take a breath - well yes and no. They may *surface* but they don't need come out of the water (jump) in order to breathe since a Dolphin's blowhole is located near the top of their head. Similarly, when you are swimming underwater at your local pool, you can just poke your head out of the water to take a breath without having to take yourself completely out of the water.
This is of course all very minor so keep your Dolphin cover =) Take care.
