I've found that fanning the pages while in Photofocus works better than turning each page by hand.
However, I do have difficulty on some books with the pages sticking together into large clumps and I miss a great deal of information. To fix this, I've been using multiple passes, forward and then backward, upside down forward, then backward.
My question, is there an easier way of fanning the pages so that I do not miss as much? I'll still make multiple passes, but if I do not miss as many pages, then that would help.
This message is for Pete in particular, but anyone can throw in their two cents.
