If focusing over the top of the book works best for you why change it?
As long as you're noticing the full pages top, middle bottom center all work fine. So don't stress it just look over the top of the book as you turn the pages. Do that for a while and you'll be moving your head up and down and maintaining photofocus with ease anyway.
