In Diamond Feng Shui, why is the 9-Grid Chart used to determine the location of the 20 year cycle flying stars instead of a pie chart that is commonly used to determine the location of the 20 year cycle flying stars by many feng shui practitioners/consultants etc. and as taught in various other feng shui courses?

You can use either type of chart. Most floorplans lend themselves more readily to the grid, but the pie chart can be used instead, or for layouts that are really irregular. If you find the pie chart easier to use, by all means utilize that one!
