does anyone know where in the course or on the CD's I can find instructions on what to do with areas outside the 9 direction grid?

a large part of my den sticks out, and it woudl be helpful to know how these areas are handled.

I'm not sure what you are asking. If you have made a box grid for your home and you have a piece of the house that doesn't seem to "fit" in it, it is still in a "direction" location of your home.
