Also, maybe you could try to think of or watch the making of the individual items on the menu. That would definately help with the ingredients. Better yet, if possib`le, make/cook the items yourself.
Create a mind map with one of the categories in the middle then draw the titles of each menu item (note how many there are for that category) draw quirky images that will help trigger the recall of those menu items. Next stage pick the easiest menu items to add the ingredients to the mind map. I suggest you make up a story to help link/remember the ingredients, funny, rude or outrageous will help you to remember it better. Remember to get visual. If your story goes something like the lettuce kissed the mayo then in your minds eye that animated lettuce is probably wearing the red lipstick and has long eyelashes to boot.
Depending on the number of categories you'll have one mind map for each (it will help you to visually recall the images you created as well as reading the information)
As suggested do it in stages. First concentrate on learning the names of the menu items in each category and then the ingredients. Avoid building the mind maps all in one go. Do a bit for each... coming back to look at it again helps to aid your memory. When you build up the ingredients look at tackling them in groups of three... putting the mind map aside for at least 10 minutes before you work on the next lot. It will probably pay to build the mind maps over a period of a few days if possible.

For ingredients, you must know the item. See it, taste it, know what each ingredient does to the flavour, what it does to the eating experience.
Can you tell I Seldom memorize things for the just for the sake of remembering them.

It's a great system, but not as useful as it sounds, because if you really need to memorize a number, you could just write it down.

Cashews... imagine chewing on cash or wearing shoes made out of cash.
Carrot... car rotting,
Ceasor salad dressing... ceasor standing stark naked getting dressed up with salad assortments.
Smoked salmon- fish smoking a cigarette.
The above is a play on words. The idea is to let go and have fun with learning it. Remember to review each list for 3 to 5 minutes checking how well you remember from time to time. Anything that you don't remember you just need ot improve the image and sound effects, a squeeze of lemon could well be an image of a lemon sneezing as a hand squeezes it hear the loud sneeze in your imagination as well. Allow it to build, you'll find that once you got the foundation you'll be able to remember the other stuff easier.
If you get frustrated while trying to learn the menu... get up, get yourself a glass of water, go outside and do some deep breathing exercises to relax yourself (just breathe ). Then when you feel relaxed return to your project. As for the water... feel free to drink it anytime.
