what are these alpha and theta states I keep reading about?

Alpha is the awake, relaxed state, while Theta is the deep relaxation/dreamy-sleepy state. When you are in these states, you can more easily learn, and your entire mind is open to suggestion. Delta is deep sleep and Beta is the most typical state throughout your day.
Someone else should offer a more intelligent answer then that, but that's from what I've gathered.
